This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

2 8 1/2-oz. cans quartered artichokes
1 cup vegan mayonnaise
1 cup soy parmesan “cheese”
1 tsp. paprika
Garlic powder, to taste


Instructions:
-----------------------------------------------------
Preheat the oven to 350ºF. Drain the liquid from the artichokes, mash the artichokes, and combine with the remaining ingredients. Scoop into a casserole dish and bake for 30 minutes. Sprinkle paprika on top before serving. Serve with chips, toasted and cut pita bread, or sliced fresh vegetables.
