Polenta With Zucchini and Tomatoes by http://www.vegcooking.com

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

2 garlic cloves, minced
1 Tbsp. olive oil
2 medium zucchini, diced
1 large tomato, diced
1/2 cup tomato or spaghetti sauce
1 tsp. salt
1 16-oz. tube prepared polenta, cut into bite-size pieces
Instructions:

In a medium skillet, sauté the garlic in the olive oil over medium heat for 1 minute.
Add the zucchini, tomato, tomato or spaghetti sauce, and salt. Continue cooking until the zucchini starts to soften—about 5 minutes.
Add the polenta and toss gently to coat. Reduce the heat and cook for several minutes more, without stirring, until the polenta is heated through.
