This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

3 cups diced chicken-flavored seitan ("wheat meat")
1/2 cup diced peeled mango
1/2 cup diced fresh pineapple
1/2 cup drained, sliced water chestnuts
1/2 cup sliced celery
1/4 cup sliced green onions
1 Tbsp. mango chutney
1 Tbsp. vegan mayonnaise
1 Tbsp. vegan sour cream
2 tsp. lemon juice
1 tsp. minced peeled fresh ginger root
1/2 tsp. salt
1/4 tsp. pepper
1 large papaya, peeled and cut into 10 slices
Instructions:

Combine the seitan, mango, pineapple, water chestnuts, celery, and green onions in a large bowl.
Combine the chutney, vegan mayonnaise, vegan sour cream, lemon juice, ginger root, salt, and pepper in a small bowl. Stir the chutney mixture into the seitan mixture and mix well.
Divide the seitan mixture among five plates, garnish each plate with two slices of papaya, and serve.
