Light Chickpea Salad by http://www.vegcooking.com

This recipe is suitable for a: vegetarian/vegan diet.


Ingredients:

1 16-oz. can chickpeas, drained
3 stalks celery, diced
3/4 cup vegan mayonnaise
2 Tbsp. lemon juice
1 clove garlic, minced
1 tsp. minced fresh parsley
1 Tbsp. chopped onion
Salt and pepper, to taste


Instructions:
-----------------------------------------------------
Mix the chickpeas and celery. Add the remaining ingredients and season, to taste. Serve in pita pockets or as an individual salad.

I had to bring a salad to my department barbeque and this is what I chose to make.

Admittedly, the only reason I chose this was because it was the easiest thing I could find on here (who knew that freaking salads could be so complicated!).

It turned out pretty good! My only complaint about the recipie is that adding the lemon juice made the veganaise very watery. I would suggest adding a little bit of lemon juice at a time to ensure that it doesn't end up like mine did. Also, it was bit garlicly, and since some people don't like garlic I would maybe use a very small clove next time.

Still, even in its rather sketchy watery state, it ended up 90% eaten :rockon:

Oh, and I think that this would make a REALLY good sandwich. An excellent replacement for chicken salad, in my opinion.
