Double Chocolate Breakfast Cookies by zimngir

This recipe is suitable for a: vegetarian diet.
Ingredients:

1/4 cup cocoa
3/4 cup whole wheat flour
1 cup all purpose flour
1 cup brown sugar
1 1/4 cup regular oats
1/2 tbsp. baking soda
1/2 tsp. baking powder
3/4 tsp. cinnamon
1/4 cup mini chips
1/4 cup raisins
1/2 cup applesauce
3/4 tsp. vanilla extract
1/2 cup egg beaters or egg whites
2 tbsp. water
Instructions:

1. Preheat oven to 350 degrees F.
2. Mix together all dry ingredients in a large mixing bowl, cocoa through raisins.
3. Mix with whisk and set aside.
4. Mix together all wet ingredients in a medium bowl.
5. Make a well in the dry ingrendients, pour wet into the dry.
6. Mix well.
7. Spray 2 cookie sheets with cooking spray.
8. With wet hands, form about 9-12 large cookies, place on greased cookie sheets, don't place too close together.
9. Bake for 7-8 minutes for soft, chewy cookies or 10 minutes for dry cookies.
10. Remove from pan and let cool on cookie racks.
11. Store in tupperware, wax paper between cookies

I am sure you can use whipped tofu (1/4 cup) plus 1 ener-g prepared for the eggs. I am planning on making variations on this cookie and it is based on this one by Jennifer
