Roly Poli Ravioli by frenchie
Category: Main Dishes - Pasta
This recipe is suitable for a: vegetarian diet.
Ingredients:

8oz. vegetarian breakfast sausage
1 tsp pumpkin pie spice
1 can pumkin puree
1 1/2 c half & half
2 pkgs. (13 oz each) frozen cheese ravioli, cooked
salt & pepper to taste
1 c gruyere cheese
Instructions:

Preheat oven to 375 degrees. In a large skillet, crumble sausage and lightly "brown", then coat sausage with pumpkin pie spice, then stir in half & half.
Pour sauce over the pasta and coat pasta well. Season to taste with salt & pepper. Place pasta and sauce in a baking dish and top with cheese.
Bake 20 minutes, then broil for 5 minutes to brown the cheese.

This can easily be converted to a vegan recipe with the use of soy cheese ravioli, soy creamer and soy mozzerella for a topping...even better would be seasoned breadcrumbs as a topping. I got this recipe from Parents Magazine, and adjusted it to fit my vegetarian diet. It's a wonderful warm dish that would be a great addition to your table on Thanksgiving.
