African Cabbage by vggiegirl

This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

2T olive or canola oil
1 Medum Onion, chopped
2 Cloves Garlic, crushed
1/2 Tsp Crushed Red Pepper
1-2T Curry Powder (I use Madras Curry)
1 Large Tomato (w/ juice), chopped (Or canned equiv.)
1 Small-Med Head Green Cabbage, Shredded
2 Carrots, sliced
1-2/3 C Water
Instructions:

Add oil to heavy, large pan and bring to heat. Add onion, garlic, crushed red pepper and curry. Sautee until onions are tender, about 7 minutes.
Add tomato, sautee about another 3 minutes
Add water, cabbage and carrots. Stir well and cover. Simmer until the veggies are done to your liking, over medium heat.
If there is still liquid left, you can either eat as is, or cook it off, by removing the lid.

This is a good, low-fat, low-cal dish to be eaten over a whole grain. Excellent with brown rice, millet, or quinoa.
