Vegan "Beef" Stroganoff by cyberactivist

This recipe is suitable for a: vegetarian/vegan diet.

Sauce:
2 tablespoons soy margarine
2 tablespoons flour
1 vegetable bouillon cube dissolved in 1 cup hot water
1 cup non-dairy sour cream (see below for recipe)
2-3 tablespoons dry sherry
Juice from draining 4-oz can mushrooms
"Meat" Preparation:
Reconstituted beef strips (equivalent of 1-1/2 pounds)
4 tablespoons soy margarine
1 onion, chopped
4-oz can of sliced mushrooms, drained
1/2 teaspoon salt
Non-Dairy Sour Cream
1/2 lb. silken tofu
1/4 cup canola oil
1 tablespoon lemon juice
1-1/2 teaspoon sugar or honey
1/2 teaspoon salt
Instructions:

Reconstitute "Not! Beef" strips.
Sauce:
Melt margarine and flour together in a skillet, stir constantly until brown. Slowly stir in the bouillon and cook, stirring constantly until it thickens to the consistency of brown gravy. Let cool a few minutes and stir in the sour cream and sherry. Set aside.
"Meat" Preparation:
Melt margarine in large skillet. Brown the "meat," onion and mushrooms until fairly dark brown, being careful not to burn. Lower the heat to keep mixture just simmering, and stir in the sauce. Simmer 30-40 minutes, stirring frequently to keep from sticking.
Serve over rice or noodles (serves 4)
Non-Dairy Sour Cream
Combine in a blender: Blend until smooth and creamy. Makes 1-1/4 cups

This is an adaptation of the traditional recipe as cooked up by Laura's mother. This is by far one of the best meals I have ever eaten!
