Marie Callender Cornbread Clone by zimngir
This recipe is suitable for a: vegetarian/vegan diet.
Ingredients:

1 1/4 cups flour
3/4 cup cornmeal
2 teaspoons baking powder
1/3 cup sugar (used Splenda)
3/4 teaspoon salt
1 1/4 cups whole milk (soy milk, unsweetened)
1/4 cup shortening
1 egg (applesauce, unsweetened, 1/4 cup)
***HONEY BUTTER***
1/2 stick butter softened (or vegan margarine)
1/3 cup honey (or agave nectar, I suppose)
Instructions:

Preparation:
Preheat oven to 400F. Combine first 5 ingredients in a bowl. Add next three ingredients and mix only until all ingredients are well combined. Put into a well greased 8x8 inch pan and bake for 25 to 30 minutes until golden brown. Let it cool a little before serving. For Honey butter mix with mixer to whip it until it is fluffy.
(I made mine in "Texas muffin" tins and I think that these would be great made with fruit too, like cranberries and OJ, etc. so that only took 20 minutes or so. The honey butter is not needed.)
