Crystalized Ginger Cookies by Sakuragirl

This recipe is suitable for a: vegetarian/vegan diet.

Ingredients:

1 1/2 cups all purpose flour
1 cup wheat flour
3/4 cup chopped crystalized ginger
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp ground ginger
1 1/4 cups sugar divided
1/2 cup apple sauce
1/4 cup veggie oil
1 tsp lemon rind
1 tbsp lemon juice
1/4 tsp tsp vanilla extract cooking spray

Instructions:

Preheat oven to 350 F. Combine flours and next 5 ingredients and stir well with a whisk. Make a well in the center of the mixture. In another bowl combine 1 cup sugar, applesauce and next 4 ingredients. Add to flour mix and stir until just moist. Cover and chill for an hour. Lightly coat hands with flour. Roll into 24 balls and then coat in sugar. Place balls 2 in. apart on baking sheets coated with cooking spray. Bake and then cool 1 minute on pan.
