For true chocolate lovers, I would like to call attention to the Scharfenn Berger 82% Cacao bar. The intensity is almost too much, but in a good way.
I got mine at Whole Foods.

I'm pretty sure I've had that bar before. Mmm! The darker the better.

I've tried that, it was a little too much on the bitter side for me. Of course, I've heard that if you let dark chocolate age it mellows and gets fruitier. Like that's gonna happen around my house!
I like the Chocolove 77% dark.

I have actually seen one that is 90% cocoa. Seems to me it would just taste like eating plain, unsweetened baking chocolate? I dunno, haven't tried one yet.
My favourite chocolate is Cocoa Camino Bittersweet 70% cocoa. At 4$ a bar, I don't get them too often, but they are goooood.

I prefer mine in the 70s, too, generally. That's an excellent brand.

One more vote for a percentage around 70/75. I've had some 85% cocoa chocolate and while it's not bad, it's not the best either. There's one brand of fair trade chocolate I received as a present last year that was very good. I can't remember the name right now but I'll try to post it later.
