I have been slowly turning vegan and would like to purchase a good cookbook. I'm a college student but have access to a kitchen. I'm looking for a book that provides cheap, easy recipes for one or two people that don't require a billion ingredients that I would have to go searching for. I don't really have room to store left overs of a recipe that makes 10 servings. (this happened recently with a chili recipe and i literally had to cram all of my food in my minifridge and slam it shut) Anyways, I was thinking about a book called Vegan Cooking for One...or something like that. I was wondering if anyone had it and knew if it was a good choice. Or, if anyone had suggestions on a book that I could purchase that would be worth the money. thanks!

Hi wildruby! I bought a cookbook not long ago at my local Half Price Bookstore called "Conveniently Vegan". The ingredient lists are very short, the recipes are simple, and the food is pretty good. Some recipes serve more than 2 but you can just cut it in half very easily.

I have "Vegan Cooking for One" by Leah Leneman, it's ok, there are some good recipes but I find that lots of the recipes seem to be heaps of effort for just 1 serving so I usually end up at doubling it anyway. I quite like "Table for Two" by Joanne Stepaniak, I usually find I need to adjust the recipes a bit to suit my tastes but most of the recipes are quite quick and easy to make. I haven't found any really good books though, you might want to check if your local public library has any vegan books so you can try them out before you buy.

I have Vegan for One and haven't even looked at it for a few years for the same reason. Pretty basic stuff. I live alone and what I do is either reduce regular recipes, or more often I just freeze half of whatever I make. I like to make something that will at least last a few days anyway so I don't have to cook every night...

Well, I dunno. My mom bought me the book when I turned vegan. Of course, I'm 17 and and have a fairly busy schedule, and have to cook all my own dinners. Most of the fairly easy recipes in there are nice when you just want decent, uncomplicated food.

i dunno i have a ton of cookbooks, some vegetarian, but i find i still have better luck just looking online and halving recipes. or i'll look in my boyfriend's omni books and veganize something. he has one called "the four ingredient cookbook" it's geared to college students who don't really cook much, a lot of the meals can be veganized pretty easily and every recipe only has 4 ingredients. can't get much simpler than that. though i'd be prone to adding things anyway.

Cooking With Peta has a lot of amazingly simple recipes with minimal ingredients - you can reduce the recipes, or just save the small amount of leftovers (usually recipes are meant to serve 2-4 people).

"Table for two" has very simple vegan recipes for one or two people. I've only tried one recipe so far, (french toast) but it was very tasty.
