My mom was recently diagnosed with an allergy to gluten, and I'd like to get her a gluten-free cookbook for bread machines. I have seen a couple in stores, but they seem to want to use gelatin in a lot of the bread recipes. (My mom is well on her way to vegetarianism and perhaps even to veganism.) I suppose I could teach my mom to use agar, but I'd prefer to find a book that doesn't use gelatin (butter or dairy is ok, as she can either use them or easily substitute).

I've seen a lot of gluten-free bread machine books on amazon, but it's tough to tell what ingredients are used. Can anyone offer a recommendation? Thanks!
