Basic curry

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 30 minutes
Serves: 2 - 4


Ingredients:

For the masala: Cinnamon, cloves, cummin, coriander, nutmeg, cardamom, black pepper... all of it, some of it, according to your taste. The black pepper, cinnamon and cloves are sorta necessary IMO

Other spices: Turmeric and chillies, salt, garlic and raw ginger.

Oil to fry it all in, any oil you like but there's nothing wrong with olive oil or coconut oil in this case.

The lentils and vegetables: Red lentils are the easiest, no need to prepare them. Add any vegetables you like

The sauce: Coconut milk or crushed tomatoes, or both!


Instructions:

Fry the turmeric and the ground chillies in oil with the salt and chopped onions and finely garlic and raw ginger. Add the lentils and the chopped vegetables. Let it fry for a while. Add the fluids, put the lid on, let it simmer until the lentils are soft. Grind a little masala and add right before serving. Adding a little bit of lime juice right at the end might make it perfect for you, at least that's how my wife seems to feel about it. I can do without the lime juice myself actually.

This is just the basic idea. Chop onions and garlic and ginger, fry it with turmeric and chillies, add whatever and let it fry for a while and finally add the masala. Basic indian cooking.

Hi Terje,

thanks for sharing your recipe, I'm going to save it for my next attempt!
I've tried getting a good flavorful curry sauce going for my veggies + beans + rice bowl and so far, not quite getting there.

Sorry, I have never used chillies before, I'm a newbie when it comes to them :-(
When you say "chillies" do you mean red hot peppers, the long skinny ones? or another kind? or do you mean powdered chili powder?
If the "hot peppers" rather than spice powder, how much to use?
