Tofu Loaf ('meatloaf')

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 90 minutes
Serves: 4


Ingredients:

1 pkg (12 oz) Extra Firm Tofu
1 egg/egg substitute**
1 cup bread crumbs**
seasonings**


Instructions:

Mix marinated tofu in food processor until liquidized. Remove from processor. In a separate bowl (I used the same bowl that the tofu was marinated in) add bread crumbs, mix. Add egg/replacer and seasonings. Return to processor, making sure everything is equally mixed. Remove from processor once again. Place goopy mixture into a suitable pan for making meatloaf. Bake for about a half hour covered, then uncovered for another half hour at about 400 f.

Loaf will be pretty moist after cooking, so allow about 10-20 minutes to cool and solidify.

This was made with eggs, but I'm sure could be substituted for egg replacer. Estimated 1 cup for bread crumbs. And the seasonings I used were salt and pepper, the marinade I used on the tofu, garlic, onion powder, parsley, oregano, hot sauce, soy sauce, etc. Be unique!

Oh and I made sure this recipe was super simple with easy to obtain ingredients. All the recipes I found online called for items that were not handy in my house. Also, try making a nice veg gravy to float over top of the loaf and serve with potatoes. Or simply use the leftovers to make a delicious sandwich.
