As I mentioned in my introductory post, I want to be a vegetarian for ethical reasons. I have been trying an incremental approach: before Christmas of last year I stopped eating pork and chicken. I had been approaching the end of the year with idea of next giving up either turkey or beef or both. However, my intentions changed this morning when I got the results of recent blood work.

The BAD: My cholesterol is high. My good cholesterol is not high enough. My triglycerides are through the roof.

The GOOD: I am of course aware of the health benefits of a vegetarian diet, but that has never been why I thought about embracing it. However, now I have a great health incentive to support my ethical desires.

The sooner you get on track eating healthier, the sooner you'll see some positive results regarding your cholesterol. However, if high cholesterol runs in your family, results might not be quite as good as you'd like.
