As I mentioned in my introductory post, I want to be a vegetarian for ethical reasons. I have been trying an incremental approach: before Christmas of last year I stopped eating pork and chicken. I had been approaching the end of the year with idea of next giving up either turkey or beef or both. However, my intentions changed this morning when I got the results of recent blood work.
The BAD: My cholesterol is high. My good cholesterol is not high enough. My triglycerides are through the roof.
The GOOD: I am of course aware of the health benefits of a vegetarian diet, but that has never been why I thought about embracing it. However, now I have a great health incentive to support my ethical desires.
