I'm in Katy. Here are the places we go to for vegan food:

Sushi Hana, and Kenzos for cucumber rolls or healthy choice rolls, and edamame.
Pei Wei has several vegan options.
Jason's Deli has a good salad bar and some sandwiches that can be vegan (can't remember which right now).
Panaras has some soups, salads, and a Mediteranian Sandwich that is vegan without the cheese and with different bread.
The Alamo Drafthouse will substitute tofu on salads and sandwiches. We love to go there for dinner and a movie.
Mission Burrito has some vegan options.
Hasta La Pasta, we get whole wheat pasta with fresco sauce and vegetables.

You should have even more options at these restaurants since you are vegetarian.
