View Full Version : Tofu brownies- no egg substitutes?

Hi everyone! It's Suzie, aka Deadflowers. (I'm a newbie, in case you saw my username and thought WHO THE HECK IS THIS?! :nigel: )

So I just made a delicious (well, I hope...) batch of vegan brownies from a recipe I found online. The recipe called for a cup of silken tofu as the milk/egg/butter substitute. Most recipes I have seen/experimented with called for a direct egg substitute such as flaxseed or Ener-G egg replacer. Is that always necessary? 'Cause... my brownies don't look that bad yet :/

silken tofu can be a direct egg substitute. :)

Really? Great! I've heard that it was, I've just always seen it in recipes along with something else, like flax or a ripe banana. Thanks! :up:

If you want to try some really great brownies, buy some vegan cake or brownie mix. Add one can of pureed black beans. Mix well. Bake at 350 for 20-30 minutes.
You can also do this with a can of pumpkin. With the black bean recipe, you won't be able to tell that it contains beans.

I keep meaning to try this. When you start with a pre-made mix, do you add anything else, or just the beans/pumpkin for moisture?

I don't add anything but the pureed canned beans or the pureed canned pumpkin. The only exception is if the mix is still too thick and not all is combined, i will add small amounts of water until it is all mixed. Then spread into a pan and bake.
Now I need to make some tonight. :)

Thanks. I almost bought a package of dairy-free, gluten-free brownie mix for $3 at Trader Joe's on Monday with a can of pumpkin or black beans. The instructions called for adding eggs/egg substitute and oil etc but I wasn't sure of your method so I changed my mind last-minute. I think next time I will get it though.

Some of the ladies in my office want to start bringing in snacks to share each Friday. Personally I am avoiding most junk food and probably won't partake, but so as not to be a spoil sport, I could make these and not feel as guilty (or worried about ingredients). Also, one of the guys at my office has a gluten allergy so he wouldn't have to be excluded.
