Enchaladas

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 15 minutes
Serves: 6
Ingredients:

1 can vegeburger
1 can black olives, drained (12oz)
1 can pinto beans 12oz
1 can enchalada sauce 12o
2 tomatoes, choppe1 oinion, chopped, optional
2 cups cheese (omit if vegan)
12 corn or flour tortillas, each one quick fried on each side so still soft
Instructions:

Combine all ingredience, except tortillas and cheese. Mix and heat. Using a slotted spoon, add mixture in each tortilla, add cheese and roll. Continue till all tortillas are gone. Pour sauce over the top and remaining ingredience, add the rest of the cheese and bake for 20 mintues uncovered

Great served with sliced avacados on top and sour cream. Also Spanish rice is a great side dish.
