Vegan Stuffed Shells

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 25 minutes
Serves: 4


Ingredients:

16 jumbo shells
olive oil
2 cloves garlic, minced
1/2 onion, chopped
1/4 cup fresh parsley, chopped
1/4 cup vegetable broth
8 oz vegan cream cheese
1 lb firm tofu (house brand garlic & pepper steak preferred), coarsely chopped up
2 Tbl lemon juice
black pepper
garlic salt
1 - 1 1/2 jars of spaghetti sauce


Instructions:

Cook shells according to package. Saute onions, garlic and parsley in olive oil for 1-2 minute(s). Add broth and simmer for a few minutes. Add cream cheese, tofu and lemon juice. The tofu needs to be coarsely chopped up. I use an immersion blender to do this right in the pan. A food processor would work well also. Cook over medium heat, stirring constantly until the cream cheese melts. Add spices to taste. I use black pepper and garlic salt. If using the garlic & pepper steak tofu no seasoning is necessary. Remove from heat once melted.

Cover the bottom of baking pan with some of the spaghetti sauce. Fill the shells with the tofu/cream cheese filling. Cover them with the spaghetti sauce. Bake at 375 degrees Fahrenheit covered for 15 minutes. Remove the cover and bake another 20 minutes or until thoroughly heated.

Spinach can be added to the filling but I found it overpowered the taste of everything else.
