Homemade BBQ Potato Chips

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 20 minutes
Serves: 4
Ingredients:

Peanut oil or oil of choice for frying
1 1/2 pound yukon gold potatoes
salt and pepper
BBQ Seasoning:
1 1/2 c. paprika
Heaping TBS. chili powder
Heaping TBS garlic powder
4 TBS onion powder
1/2 c. sugar
Mix well and set aside.
Instructions:

Preheat oil in deep fryer or skillet.
Peel potatoes.
Slice potatoes into very thin 1/8 in slices (the thinner, the better).
Place slices in bowl of ice water until ready for frying. Meanwhile, line a cookie sheet or large tray with paper towels.
When ready to fry, drain potatoes in a colander and blot dry.
Fry in small batches until golden brown, (about 3 or 4 minutes )and drain on paper toweling.
Immediately sprinkle with salt, pepper, and BBQ seasoning.

These are a delicious occasional treat. I did have some seasoning left over( it keeps well stored in a jar or plastic container), which I eventually dumped into a pot of navy beans and they were excellent!
