I didn't know until quite recently why my mom and grandma always put a lid on the pots that were on the stove when they were cooking.

If you put a lid on pot, it boils faster, cooks faster, and you just barely have to have the heat on! This amazing discovery is saving us a few bucks a month on our gas bill, and we're not using up so much energy cooking our food. Why it took me a couple decades to figure this out, I have no idea.

So, it's environmentally friendly to put a lid on the pot or pan you're cooking in, and it saves you money.

You can take this idea even further by using a pressure cooker. Under pressure, the boiling temperature of liquids increases so you cook at higher temperature and the food is ready (much) sooner. :)

Yeah, I do that all the time. :) It's amazing how much heat escapes, especially in a cold, dry climate like where I live.
