View Full Version : What is the best meat replacement for this bell pepper dish?

Hello!
My wife and I are really new to this. We're going through our old recipies and trying to convert them. This one is a bell pepper dish a lot like the one her mother used to make (using turkey). Would tofu work, cooking it like the ground meat and mixing it with the rice before stuffing the peppers and putting in the oven? I'm worried about it turning to mush. The texture is important. Is there another vegetable that may work and still taste good with the tomato sauce?
The important thing is to be able to season it the same as the meat would have been by her mom (ground turkey, like tofu, takes on seasonings' flavor really well). We want to still taste the fennel and garlic and how it mixes witht he peppers and tomatoes, but want to just loose the meat.
What do you think?
Here's the video. The tomato sauce included is super easy (and really good), too, if you usually buy cans from the store and want to try something different. It's a bit easier than the one we have been making.

I would use Yves Veggie Ground Beef. I've never made stuffed peppers with tofu, it sounds like a good idea though :)

I would use boca crumbles, to me they have the most meat like texture. But any ground meat substitute should work fine.

I'd probably try it with green lentils because tvp and maet crumbles are a b**ch to get around here. :yes:

Have you tried just regular beans? Kidneys go well in tomato sauce...

Another vote for lentils, they are excellent ground beef replacements. :)

I used to stuff peppers with boca crumbles, they came out great and my omni bf loved them and couldn't tell the difference.

But since I've given up the mock stuff I'd probably try tempeh, and I would simmer it in the sauce so it soaks up all the flavors. I think tempeh would give a much better texture than tofu in this instance. The beans that others have suggested also sound yummy. (:

My usual stuffed pepper recipe involves either rice or couscous and whatever vegetables are in season. Sometimes I add dried fruit or nuts too. The grains hold the seasonings well enough for my liking without meat or meat replacements.

Dangit, now I'm hungry.

I'd use lightlife fake "sausage". The kind in the tube that's refrigerated. I bet that's just as good if not better than the one you posted from youtube. I'd probably add some mushrooms too. That sounds really good.... messy but yummy.

ETA: I would not use tofu in this. The result would not be at all what you're looking for.
