I'm starting a vegan diet, got some information from my dietitian. I do not wish to touch any foods with soy nor do I wish to use any cooking oil/butter. Can I get the necessary fats from avocado and nuts instead...

Yes, it is possible. There are lots of vegetarians and vegans (many on this board, for example) that do not include soy products in their diet and are getting all they need.
I am curious for the reason for removing cooking oils from your diet. Is there a health reason for doing this? Olive oil can actually provide excellent flavor and some nutritional value.

I use to use Extra Virgin Olive Oil rarely but a year now I don't use any at all.

It's funny, because after I posted about how yummy olive oil is, I realized it has been ages since I last ate a meal with oil. EVOO used to find its way into many of my meals... even my salads. So much for practicing what I preach. :sealed:
Oh well, even without oils and very minimal soy products, my medical checkup always comes back great. My doctor is always shocked that someone with my family history of heart disease and cancer is in such great health.

Cold pressed vegetable and fruit oils, such as olive oil, can be very healthful. Unless you are very obese and needing to lose weight there is no real, good reason to completely cut out cooking and salad oils.
I can't speak for you, as every body is different, but my body requires more than just the oils I get from nuts, seeds and avocados. My skin becomes dry and flaky, my hair dull and I begin to lack energy. My body just seems to do well with a fair amount of fat. Other people seem to go almost fat free and are find and healthy. It's all about moderation and what works for you, your body and your lifestyle.

yes, you can use avocado, nuts and also seeds (e.g. flax seeds).

Definitely not obese. I have always used oils rarely.

I'm still curious why you are avoiding healthful oils. Not picking on you, genuinely curious. What do you use in their place when you cook?

Two questions that have been bothering me:
What about things like snacks like sun chips is it okay to consume those ?
What about alcohol ? I don't drink regularly, I haven't had a drink since January but knowing that I will be visiting friends on vacation next year I can't help but wonder what effect it may have on my health now that I'm going vegan.
I'm still curious why you are avoiding healthful oils. Not picking on you, genuinely curious. What do you use in their place when you cook?
I baked all meat. Only time I'd use oil was with eggs and bacon and I stopped those last year.

What you are suggesting is a very healthy way to eat. It's best to get nutrients from whole foods. Make sure that you include sources of omega-3 in your diet (ground flax seeds, hemp seeds, etc). I don't think that there is anything wrong with eating some soy, but if you don't want to or if you can't for some reason you don't have to.

It is better to get fats from whole foods because you get more nutrients that way.

These things in moderation are OK. From what you say, you don't drink much so don't worry about it. It won't have a large impact on you health.
