Apple Rhubarb and Vegan White Chocolate Chunk Muffins
Category: Desserts - Cakes

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 5 minutes
Serves: 12


Ingredients:
-----------------------------------------------------

2 1/2 cups plain flour
3 Tablespoons baking powder
1/3 cup brown sugar
1 teaspoon cinamon
1 teaspoon nutmeg

1 1/2 cups of stewed apple and rhubarb
1/4 cup non-dairy milk
2 tablespoons of oil (can be left out really)

100g vegan white chocolate bar chopped into small pieces


Instructions:
-----------------------------------------------------

Pre heat oven to 180 celsius or 360 farenheit

Mix together all the dry ingredients in a big bowl with chocolate chunks.

Add wet ingredients in a well in the middle.

Mix until the dry ingredients are just wet.

Put into your muffin tin (either greased or lined) and cook for 20 - 30 mins, or until brown on top.

I actually use this recipe to make 9 muffins as I fill mine right to the top so I get awesome muffin tops.

The recipe should be quite dry, not at all runny, so add more flour depending on how moist your stewed fruit is and how the batter is looking.

These are really close in texture to normal muffins to me. I could be wrong - it's been a while

If you want it to be healthier, just leave out the chocolate. You may need to add a touch more sugar as it adds quite a lot of sweetness to them.

Maybe you can get your hands on the Australien brand Sweet William at an online shop. They produce a vegan white chocolate bar, that really tastes good (IMO).

I know it seems heaps, but you can't taste anything, and it keeps the muffins really light, as opposed to little blocks of moist flour.

I used Sweet William, and am not sure of it's availability in America. It sounds like the one thing we guys get that you don't

I guess I'll risk the amount of baking powder then, lol.

As for availability of vegan stuff in the US: usually I'm quite envious of what Americans are able to buy when it comes to vegan food. I didn't expect there wouldn't be a white vegan chocolate. Wow. I guess I'm lucky that the Sweet William brand is available in Germany (only online shops though AFAIK but we can get it). I also like their chocolate spread.

:yes: There seem to be some vegan foods of which you can get a wider variety in Germany, chocolate may be one. Even Aldi sells about five varieties of vegan (dark) chocolate (Moser Roth brand), try the orange-almond some time :drool:
Bonvita makes a white vegan (rice milk) chocolate too, which is available at Basic stores and some other organic supermarkets. Worked great in chocolate chip cookies.

Thanks for an interesting recipe, Coley. Rhubarb and white chocolate sound like a perfect match.

I tried the Bonvita brand, both the plain and the cranberry kind. I didn't think they were that tasty and they're more expensive that the SW one. I baught the Bonvita brand once because the cocoa is fair trade but I didn't really like it while I think the SW brand tastes great.

I like the Rapunzel chocolate. I think Nirvana Noir is the name.

I think I have to shop at ALDI again. I don't shop there often because Penny is the nearest discounter where I live but orange-almond chocolate... hmmmmm...

I think I have to shop at ALDI again. I don't shop there often because Penny is the nearest discounter where I live but orange-almond chocolate... hmmmmm...And I just heard that their soy schnitzel and nuggets are vegan now too (used to have eggwhite in them), so there are even more vegan foods to buy at Aldi than just plain tofu, soy milk and chocolate...

Yes, they've become vegan a while ago and they taste quite good. The "Vegetaria" brand at tegut is very yummie but not vegan. I won't give up hope that they take out the eggwhite though. Happened after all with the ALDI stuff.

Err, maybe we should start a thread named "German vegan yummieness" or something, lol.

Yay so glad I found this recipe..... I just bought three blocks of SW white choc as it was on special..... Really want to make rhubarb muffins with them coz our rhubarb is growing like crazy and it just gets bigger and bigger. Yay..... this is EXACTLY what I feel like making!
