Roasted Applesauce

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 35 minutes
Serves: 5
Ingredients:

3 lbs Macintosh apples (about 10 apples)
Juice of 1 lemon
2 tablespoons canola oil
1/4 cup pure maple syrup
2 tablespoons sugar
1 teaspoon ground cinnamon
1/2 teaspoon finely grated lemon zest (optional)
pinch of ground allspice
1/4 teaspoon salt (optional)
Instructions:

Preheat the oven to 400 F
Peel, core, and slice the apples into 1-inch chunks. Sprinkle with lemon juice and set aside.
Combine the oil, maple syrup, sugar, cinnamon, and zest in a glass baking dish and whisk together. Add the apples and toss to coat.
Roast until the apples are very tender, about 25 minutes, turning once after 15 minutes. Transfer to a large bowl and mash. If you prefer a smoother applesauce, you can pulse it a few times in a blender or food processor. You can serve this warm, at room temperature, or chilled.

This recipe is from Vegan with a Vengeance by Isa Chandra Moskowitz. I made a few of my own changes, like I excluded the lemon zest and salt because I don't have a zester and usually always leave salt out of my baking. I also didn't roast the apples, per se, I had my oven on its Bake setting. I served it right when it was done, good and hot but obviously it's versatile. *This doesn't have to be strictly a dessert, it can be served as a side dish with whatever food it might compliment.* Can you say potato pancakes?
