The other night I needed a super quick dinner for me and was stumped. I ended up throwing something together that was simple, fast, and cheap cheap cheap lol. I thought I'd share, btw this is vegan.

I had a little box of tomato soup (it was imagine brand, got it at the discount place for $1.50 but you could use any tomato soup you find. If you're vegan check for milk-- they sneak it in the already lovely tomato soup!). I put it in a pot and mixed it with some taco seasoning, however much you like. Then I put in some frozen corn, a can of drained black beans, and a can of fire roasted tomatoes. Done. If you want to you can also add some tortilla chips :D

Anyways so I did the math and it cost me about $3.50-$3.60 and it was about three servings. Not bad :D:pibo:

I do this exact same thing. I come up with meals and calculate what it costs per serving. I also calculate the calories/fat/fiber content per serving, too.

Creations that come out a winner on all fronts get eaten often.

I'll have to try your creation soon... I think it would taste good, too, BTW.
