Vernally Carrot Cake

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 60 minutes
Serves: 12


Ingredients:

650 g of carrots
250 g of margarine
300 g of sugar
2 packages vanilla sugar
60 g of soy flour
420 g of soy drink
420 g of flour
20 g of baking powder
2 X 70 g of water
2 X 5 tablespoons of food starch
2 X 250 g of powdered sugar
marzipan or sugar carrots for decoration


Instructions:

Clean and grate the carrots. The margarine, the sugar, the soy flour, the vanilla sugar, the soy drink, the flour and the baking powder are mixed to a homogeneous dough. Then add the finely ground carrots and stirr well. Lay baking paper on a baking sheet and spread the dough properly it. Bake the cake approx. 30 minutes with 175°C (app. 350° ).
Mix the water with the powdered sugar and the starch to a sticky icing and spread it on the cooled down cake. Decorate ind an let the icing dry.

This cake is very sweet and yummy. It fits on every easter holiday coffee/tea table and slighty tastes of carrots (this taste was new to me but is delicious in combination with the vanilla flavour and the sweetness of the cake). But it ist not a dry cake. It is very moist but firm. It also doesn´t rise either. Serve it with some soy-cream or a ball of vanilla ice.
