View Full Version : Leahey Gardens broccoli cheese soup (vegan): yummy and convenient!

I've always loved broccoli cheese soup and resigned myself to either not eating it ever again or making it myself (assuming I could find a recipe) once I went vegan.

But by sheer luck, I found a replacement: Leahey Gardens broccoli cheese soup. I got mine from Cosmo's Vegan Shoppe (http://www.cosmosveganshoppe.com/Merchant2/merchant.mvc?Screen=PROD&Store_Code=CVS&Product_Code=LFBCS&Product_Count=&Category_Code=) for $1.99 (it comes in individual serving packets).

I didn't have high hopes, although I generally like things made with nutritional yeast, but I had to try it anyway. I used the microwave to make mine (mix together the soup mix and 1 1/2 cups water, stir, microwave for 1 minute, stir again, microwave for another minute and then let set for 5 minutes) and while it came out a tiny bit lumpy, it's really yummy.

Flavorwise, it's pretty close to the real deal (I might even say that it's very close, but your mileage may vary), with a mild cheddar-ish sort of taste, and much lower in fat/calories (for those who are watching what they eat). There's not a ton of broccoli in it and the pieces are very small, but that's been true of most broccoli cheese soups I've tried. It definitely tastes good and makes a great, quick lunch. :drool:

I bought another 5 packets, so it's definitely a "buy again" for me. I love that they come in single serve packets and that I can carry them with me and whip up a quick meal anywhere that I have access to a microwave and water. I am wondering how well it would turn out if I just used boiling water and let it set. I may try that at some point.
