Mixed Berry Cheesecake

This recipe is suitable for a: vegetarian/vegan diet
Preparation Time: 15 minutes
Serves: 8
Ingredients:

2 containers plain, nondairy cream cheese, softened (Tofutti, or similar)
1 cup sugar
Juice of 1 lemon
1 tsp vanilla essence
Frozen mixed berries (or fresh)
1 box of biscuit base
Instructions:

Preheat the oven to 180°C/350°F
Prepare base as per instructions on box.
Combine the cream cheese, sugar, lemon juice, & vanilla until smooth.
Crush the berries & leave some whole - it gives texture later
Add the berries to the cream mix & mix well.
Pour into cake tin & bake for 60 minutes, or until the top is golden. Keep a close eye on it.
Chill overnight.

I store my cheesecake in the freezer and leave out 5-10mins before serving.
I have made this recipe successfully with only 3/4 of sugar.
If you don't have any lemons handy, a generous splash of lemon juice will do the same job.
Next time I make this, I am going to add some melted chocolate to the cream base, then add the berries. This recipe is very sweet so I feel the chocolate will bring some good richness!
