I've been veggie for about 3 years but I find I just end up eating loads of processed stuff like Quorn all the time.
No-one else in my family is vegetarian and they all think I'm nuts but respect me enough to make veggie food for me but it's getting kind of boring. Anyone got any ideas?:confused:

There is lots of stuff to eat! The idea is not too be limited by the 'meat, potatoes, and a vegetable' mindset, and to explore other options.
Take a look at ethnic food. There are tons of awesome foods that are vegetarian from other cultures. Chinese, Japanese, Indian, African, Mexican, Italian, Greek, Thai.... The possibilities are endless.
Remember that in most countries in the world, for the majority of the population, meat is at most a condiment, and is usually reserved for special occasions. Lots of the everyday food people eat in the Third World is vegetarian, because meat is too expensive for them.
Don't be afraid to experiment. Go into ethnic groceries stores and natural food stores and buy what looks good, even if it's unfamiliar.
And I sympathize. I'm the only vegetarian in my family, and it can be tough sometimes.
Here are some easy to prepare and yummy ideas:
~Vegetable soup
~Veggie lasagna
~Bean burrito
~Spaghetti with tomato sauce and beans
~Baked beans (kind without bacon) on toast
~Veggie omelette
~Hummus and pita bread
~Vegetarian pizza
~Rice with stirfried vegetables
~Baked potato loaded with toppings like broccoli, beans, cheese, etc.
~Perogies with onion and steamed vegetables
~Quesadilla with salsa.

try to incorporate more raw foods into your diet, fruits and vegetables, all that processed crap is so not good for anything...

You need to start cooking more. You can't just eat processed foods all the time and expect to be healthy. Maybe you could buy a cook book.

Yeah, if you are going to be a veggie in an omni family, be prepared to cook...

Thanks so much! You have been so helpful that is absolutely brilliant.
I especially like the idea of more ethnic food - I really need to be more adventurous with what I eat. :)
