Easy Baked Eggplant slices

This recipe is suitable for a: vegetarian/vegan diet


Preparation Time: 20 minutes
Serves:


Ingredients:
-----------------------------------------------------

1 eggplant, sliced
1/2 cup Veganaise
1/2 tsp Onion powder
1/2 tsp Garlic powder
1/4 tsp Garlic salt or any kind of salt

Panko/Breadcrumbs (seasoned or non)


Instructions:

Preheat oven to 425 F

Scoop out enough veganiase to cover the amount of eggplant slices you want to bake on both sides. It's best to overestimate-- If you have extra, you'll probably want to eat that with the finished product.

Mix the veganaise with the onion and garlic powder. Taste to be sure it's strong enough or not too strong. Remember it's got to bake so it's good if it's a little pungent. Add salt to taste.

Slather the mixture on your eggplant slices and dredge in your coating. I use panko but Itallian breadcrumbs, plain bread crumbs, or a mixture of them will work too.

You can grease a baking pan to be sure the slices don't stick but it's probably not necessary. Bake them for 10-15 minutes, flip, and bake another 10-15 minutes depending on how crispy you like them

I know it might sound a little gross to some with all that mayo. But it's really good and super easy.

i bet thats good. i've done something similar before with zuchinni slices and dried falafel mix.

I always have trouble getting a crust to stick to vegetables in the oven! So veganaise it was :)

I remembered I'd heated up sandwiches in the oven before and they had mayonaise on them so I knew the mayo wouldn't get nasty. I'd always had an aversion to hot mayo but when these are done it's just yummy. It's not mayo-texture like. And I slather it on there big time.

I'm a bit late, but...


Ooooh, dried falafel mix? I've got some of that sitting in my cupboard and I just don't feel like buying grapeseed oil for frying. Care to share your recipe?
