I cook for myself only. I been a vegetarian about 3 weeks. I am taking it slowing. I went from one day a week to 2 days a week. This is my first week on the 2 days. I bought my first tofu. It is big . I know I can not finish in one sitting. How long can an open tofu last in the fridge? Is there websites and recipes gear to 1 person. I pledge with a group called meatout Monday or Meatless monday. I did it for the first time yesterday and tought this is great. So i am continuing it tonight. I notice when I went shopping I actually went past the meat counters without picking up anything. I looked at the meat and said to myself why am I eating you. Once I get rid of the meat and fish, I will become a full vegetarian.
Is there anybody else in the same boat that I am for one person.

Change the water every day and it will keep pretty well.
Also, consider making a bunch as part of a big dish and saving the leftovers. :pibo:

I've kept open tofu in the refrigerator for up to a week no problem. Just make sure it is well sealed (slide the open container into a ziploc or use tupperware). In the future, you might want to consider cutting the block in half as soon as you purchase it, and then freeze the smaller portions. You should only freeze firm or extra-firm tofu though. I'm a single vegetarian myself and have not had a problem with leftovers and such. In fact I've saved a ton of money being veggie. :)

Don't worry. You're not alone. :) I cook for one, but I normally make 2-4 servings and eat the leftovers for the next few days.
My package of tofu says it will keep for five days. I've never kept it in the fridge that long-- I usually cut my tofu block in to half or thirds and freeze the unused portion.

I only cook vegan for myself...and ditto on freezing tofu...works out great!

I also cook vegan for myself and like others, I cook a bunch and then eat the left overs later. I keep my tofu for about 5 days sealed up in the fridge and change the water every day. So glad to hear that you are cutting meat out of your diet tho ^_^

seriously...I have been a veggie for 18 years and still am not comfy with tofu...thanx for the help much appreciated:)

Just a note about frozen tofu -- the color and texture change completely! It becomes more of a yellowy brown color and gets more spongy/chewy and not as tender. It's perfectly fine like that, and some people prefer frozen tofu, just don't want you to get nervous if you go to thaw your tofu and find it's changed forms!

Hi Faygie. Cooking for one can be difficult but don't overlook the advantages. It gives you a lot of flexibility to experiment and you can continue your transition to a vegetarian diet at your own pace without aggravating anyone else.
I'd suggest starting with some one-pot meals like spaghetti and lasagna that will give you lots of leftovers for the rest of the week. Then slowly try new recipes as time allows.
Tofu is great but it can be a bit of an acquired taste, so I hope you don't feel like you have to eat it in order to go vegetarian. For a tofu beginner, I'd suggest baked tofu with bbq sauce if you have access to the Veganomicon (I highly recommend it even if you don't want to go vegan). If not, tofu scrambles are good and easy. I gave someone the chicken and Fish I had today. The person didn't have any food to eat. Now my apartment is officially meat free.
