Vegetarian for nearly two weeks, and am at a loss at what tastes good together 0=

So I've been reading up on all kinds of things to eat for dinner, and of course rice, beans, stir fries, soups were all mentioned. But I also saw baked potatoes cropping up a lot in everything I've read. Some said to put vegetables or beans inside one for dinner. Any suggestions or favorites? I'd also like to know which vegetables go best combined with beans and potatoes (= any ideas?

I like baked sweet potatoes topped with a simple black bean chili (black beans, onion, green pepper, tomato sauce, garlic, chili powder, cumin and hot sauce). The sweet and spicy flavors go together really well.

For regular potatoes, I guess broccoli and cheese are the typical toppings. I think any steamed veggies (broccoli, carrots, peas, corn, grean beans, etc) would probably be good in a baked potato.

a baked potato with hummus on it goes nicely with steamed broccoli with margarine and a squeeze of lemon juce on it, roasted zucchinni, french green beans, peas, steamed kale, roasted red peppers, or a combo of the aforementioned, also with ratatouille, and with coleslaw.

baked potato topped with canned baked beans goes nicely with fried onions, mushrooms, cabbage, etc, as well as with salad, coleslaw, etc (kebab shop style!).

and i like to serve with a vegeburger. cos veggieburgers are nice.

as mentioned, chilli is nice with baked potatoes. so is curry sauce. so is spagetti bolognase sauce (no spagetti).

Yeah, we do "Baked-Potato-Bar" supper every Sunday Night with several favorite toppings.
Toppings my (vegetarian, not vegan) kids enjoy include:

Vegetarian chili (many canned varieties out there).
Baked beans (many vegetarian canned baked beans, fast and simple)
salsa and cheese - or vegan "cheeze" sauce (recipe here on VB somewhere)
brocolli in cheese sauce
peas in cream sauce
mushroom gravy
curry gravy with peas and cauliflower
spaghetti sauce and cheese or not
vegetarian "sausage" gravy
scrambled eggs or tofu scramble
ranch dressing
stir-fried onions, brocolli and carrots (or whatever)

I like it with black beans, salsa, corn and sour cream mixed with taco seasoning.

fixed up canned baked beans are my favorite but my boyfriend could live off of baked potato with steamed broccoli and barbecue sauce on it.

You might like that too with your favorite BBQ sauce

You could also just cube the potato up and spread the cubes on a baking tray. Drizzle with olive oil and salt & pepper. Bake for a while at 350 and yum.

And in case you didn't know you can microwave potatoes for a faster meal. Poke holes in it first though!

Black Beans and BBQ Sauce with some Liquid Smoke on baked sweet potatoes.

I need to get some liquid smoke. My dad barbecues a lot so he's always got a gigantic stock of barbecue sauce ingredients. I always pilfer spices while I'm over there :)

I bet spinach would be good too.

I have dahl on mine sometimes, but I reckon beans are the way to go. Even a bean mix straight out of the can with some chopped tomatos, onions and spinach leaves is pretty good.

My favorite is just chili beans on top. I did the salsa thing for years but got a little burnt out. I actually bake onions and BBQ sauce with the baked potatoes. That is really yummy.

ETA-Or just leftover soup on top is good.

My favourite combinations are sweet potato + chilli, or normal potato + curry.

They also go really well with ratatouille (I somtimes put butterbeans in this too) and white potatoes also taste great with a little salt + pepper plus some plamil mayo- heaven =]

Any legume would be awesome. I like white beans, canned tomatoes, tabasco and some spices. I usually serve it with a leafy salad.

Anything you think tastes good can be thrown on a baked potato. It's kind of like a casserole, just throw stuff in lol. My personal favorite is anything with black beans. Sometimes I'll saute some mushrooms and mix it up with black beans and add vegan taco seasoning and put that on there. I'll mix black beans with corn and tomatoes on top.
I also like just putting in a little vegan 'butter' and some dill weed.

OH and you can also add bacos (sp?) bits, those fake bacon bits on there.

I eat baked potaoes with:
Salt, pepper and tabasco
Veggie curry
Fried red onions, mushroom and pepper
Grilled aubergine and courgette
Chilli beans
Chopped fresh tomatoes and coriander.

Mmmmmmmmmmmmmmmmmmmmmmm. Can't wait to have an oven/micro again! (Living in a student flat in germany atm)

I love baked potatoes with vegetarian baked beans. :drool:

As other people have mentioned, veggie chili is great on baked potatoes, too.

Of course, I love potatoes with damn near anything on them. Potatoes are my favorite food group. ;) :lol:

I love just sour cream and salt.
second faves would be broccoli/cauliflour w/ cheese, or chilli, cheese, sour cream and onions. yum

I make mine taco style with veggie refried beans and salsa (sour cream or cheese optional) or just plain with salt and pepper alongside a great big salad.
